Iyokan is one of our delightful culinary discoveries this year. It is a Japanese citrus that is wonderfully fragrant. The peels in our bars are candied with beet sugar and millet jelly, and are sweet but not overly sweet. This pairs beautifully with our 70% dark house chocolate, and a cup of our oolong tea.

Care information
Our chocolate is best kept in a cool, dry environment, away from sunlight and strong-smelling food. The ideal conditions are 55°F to 65°F and around 50% humidity. A wine fridge is a perfect storage solution!
For longer-term storage (up to 6 months), you can freeze them by following these steps:
- Wrap the entire box tightly in several layers of plastic wrap.
- Store in the freezer.
- When ready to enjoy, remove from the freezer and allow to reach room temperature before unwrapping. (This is critical to prevent sugar or fat bloom—the rough, grayish texture.)
Thawed bonbons should be enjoyed within 2 weeks.
