Last year's GABA Oolong bar collaboration with Sam Tilney, of BANGtea, was such a hit, we had to repeat it for the Year of the Horse. This remarkable GABA oolong was sourced from Alishan, Taiwan.
About the Bar
This exclusive bar is crafted with 11% tea leaves by weight, blended with cocoa butter, dark chocolate, and sugar. It is packaged in a limited-edition red envelope to welcome the New Year.
Tasting Notes: Dried persimmon, brown sugar, bread
Ingredients: Dark chocolate, cocoa butter, GABA oolong tea, sugar, and soy lecithin.

About the Tea
"This distinctive oolong is a consistent bestseller for good reason. The 2025 GABA delivers a full-bodied, thick broth with complex flavors that reminded me of slowly dried Japanese persimmons (hoshigaki) and fresh brown bread. It’s fitting that like the traditional art of making hoshigaki, this oolong’s exceptional character is developed through patient, meticulous processing that transforms simple leaves into something delicious.
It has undergone an extended 3-day anaerobic fermentation and a 4-hour roast. This harvest achieved a high concentration of 193mg/100g leaves, surpassing the minimum threshold for GABA content."

Care information
Our chocolate is best kept in a cool, dry environment, away from sunlight and strong-smelling food. The ideal conditions are 55°F to 65°F and around 50% humidity. A wine fridge is a perfect storage solution!
For longer-term storage (up to 6 months), you can freeze them by following these steps:
- Wrap the entire box tightly in several layers of plastic wrap.
- Store in the freezer.
- When ready to enjoy, remove from the freezer and allow to reach room temperature before unwrapping. (This is critical to prevent sugar or fat bloom—the rough, grayish texture.)
Thawed bonbons should be enjoyed within 2 weeks.
